Saturday evening, it's sunset, a gentle breeze caresses our faces. It's not even a village, just a place called Palisson, on the border between the Charente and Charente Maritime regions. Three buildings in the middle of a sea of vines. A few steps and we're in a wine storehouse. We explore, we smell, we taste.
And then, oh surprise...notes of cereals and spices, and aromas of pastry. A single malt in the land of cognac!
From a French brew, Palisson is produced using the Charente method of double distillation in traditional stills.
Once distilled, the eau-de-vie is transferred to the Palisson winery, where it is matured in Limousin oak barrels that have previously contained cognac, giving it harmony, smoothness and delicacy.
